INGREDIENTS:
Whipped cream - 8 oz.
Sweetened condensed milk - 14 oz (1 can).
Orange juice - 2 tbsp.
Orange rind to garnish.
METHOD:
Combine the first 3 ingredients, mixing until well blended. Garnish with orange rind and serve with fruits.

Stir fried Asparagus
INGREDIENTS:
1/2 pound asparagus
2 tbsp extra virgin olive oil.
Salt to taste.
1/4 tsp ground black or white pepper.
1/4 tsp turmeric powder.
Cheese to garnish.
METHOD:
Cut asparagus diagonally in to 2 inch pieces.
In a skillet, heat oil, add asparagus, pepper, turmeric powder, stirring quickly and frequently, until well coated. Sprinkle salt and remove from fire. Garnish with cheese and serve.

Little gourd - 1 1/2 pound , sliced.
Red chilies - 10.
Green chilies - 5, slit.
Garlic cloves - 3, sliced.
Medium sized onion - 1, sliced.
Turmeric powder - 1/4 tsp.
Oil - 3 to 4 tbsp.
Curry leaves - 2 sprig.
Mustard seeds - 1 tsp.
Salt to taste.
METHOD:
Heat oil, add mustard seeds, curry leaves, and red chilies. When the seeds crackle, add the sliced onion, garlic cloves, salt and green chilies. Saute, stirring constantly. Stir in the sliced little gourd, turmeric powder and saute for 5 minutes or till its cooked. No need to add water. Add more salt if needed and remove from fire.

Chocolate chip muffins....
1 1/2 cups unbleached all purpose flour.
3/4 cup sugar.
2 tsp baking powder.
1/4 tsp salt.
1 egg.
3/4 cup milk.
1/4 cup canola oil.
Cup cake cups.
One handful chocolate chips.
METHOD:
Preheat oven to 400 degrees, F.
In a large bowl, mix the first four ingredients.
In another bowl, mix the next three ingredients.
Add the egg mixture, to the flour mixture, mix with spoon, stir just until flour is moistened. (Avoid over mixing)
Place the cups on the muffin pan. Spoon batter into the cups, half full.
Sprinkle some chocolate chips.
Bake muffins 20 to 25 minutes until they are well risen and golden.
Immediately remove muffins from pan onto wire rack.

Veggie & Beef lasagna...
INGREDIENTS:
Uncooked lasagna noodles - 8 oz.
Eggs - 2, beaten.
Mozzarella cheese - 2 cups.
Ricotta cheese or cottage cheese - 2 cups.
Any pasta sauce or tomato sauce - 32 oz.
Chopped spinach - 2 handful.
Sliced mushroom - 8 oz.
Ground beef - 1 lb.
METHOD:
Preheat oven to 350 degrees.
In a bowl, combine Ricotta cheese, Mozzarella cheese, eggs and mix well, keep aside.Brown the ground beef, add the pasta sauce and mix well.
In a 13"x 9" baking dish, spread 1 cup of meat mixture.
Arrange lasagna noodles, over the meat sauce mixture.Sprinkle the veggies over.
Spread one third of the cheese mixture over the veggies, top with meat sauce mixture.
Repeat layering, end with cheese mixture.
Cover with foil.
Bake 45 to 55 minutes.
Uncover, sprinkle little Mozzarella cheese and bake an additional 2 to 3 minutes or until cheese is bubbly. (optional)
Remove from oven and let stand 10 minutes before serving.
