Veggie & Beef lasagna...

INGREDIENTS:

Uncooked lasagna noodles - 8 oz.
Eggs - 2, beaten.
Mozzarella cheese  -  2 cups.
Ricotta cheese or cottage cheese  - 2 cups.
Any pasta sauce or tomato sauce  -  32 oz.
Chopped spinach  -  2 handful.
Sliced mushroom  -  8 oz.
Ground beef  -  1 lb.

METHOD:
Preheat oven to 350 degrees.
In a bowl, combine Ricotta cheese, Mozzarella cheese, eggs and mix well, keep aside.
Brown the ground beef, add the pasta sauce and mix well.
In a 13"x 9" baking dish, spread 1 cup of meat mixture. 
Arrange lasagna noodles, over the meat sauce mixture.
Sprinkle the veggies over.
Spread one third of the cheese mixture over the veggies, top with meat sauce mixture. 
Repeat layering, end with cheese mixture. 
Cover with foil. 
Bake 45  to 55 minutes. 
Uncover, sprinkle little Mozzarella cheese and bake an additional 2 to 3 minutes or until cheese is bubbly.  (optional)
Remove from oven and let stand 10 minutes before serving.
