Peas curry...

INGREDIENTS:

1 medium onion, diced. (about 1 cup).
1/4 cup cashew nuts.
1 inch piece ginger.
4 garlic cloves.
1 tomato, diced (about a cup)
3 tbsp butter or extra virgin olive oil.
2 bay leaves.
1 tsp turmeric powder.
1/4 tsp cumin powder.
1 tsp coriander powder.
1 tsp red chili powder.
1 tsp garam masala. (optional)
1/2 cup chopped cilantro leaves.
3 tbsp yogurt or curd.
3 tbsp whipping cream.
Salt to taste.

METHOD:
Grind the first 4 ingredients fine, (without water).
Melt butter, add bay leaves and the ground mixture, cook stirring constantly, till the oil comes out of that.  Add the diced tomato, salt and cook.  Gradually add all the powders, mix well. 
Stir in the cilantro leaves and cook for few seconds, stirring constantly.  Add the yogurt and bring to boil.  Stir in the peas, add about 2 cups water, cover and cook, stirring occasionally.  When its
done add the cream and remove from heat.  Add more cream and salt if needed and serve.

Peas can be substituted with mushroom, panneer or tofu.
