INGREDIENTS:
Salmon, King fish or Tuna - 1 lb.
Fresh bread crumbs or dry bread crumbs - 1/2 to 3/4 cup.
Green chilies - 4 to 5, seeded and chopped.
Onion - 1 finely chopped.
coriander leaves - 4 to 5 sprigs, finely chopped.(optional)
Salt to taste.
Ginger - 2 inch piece, grated.
Lime juice of 1/2 lime.
Egg - 1, beaten.
Dry bread crumbs - 1 cup.
Oil to fry the cutlets.
METHOD:
Clean, boil or steam the fish. Flake the pieces.
Heat 1 tablespoon oil and saute the chopped onions, grated ginger and chopped chillies. Remove from fire. Add the fish flakes, lime juice, bread crumbs, salt, chopped coriander leaves and mix thoroughly. Divide in to even sized balls and flatten like patties. Dip in the beaten egg and coat in the bread crumbs. Fry in the hot oil until its golden brown. Serve hot with ketchup.

Paratha...
INGREDIENTS:
Wheat flour - 2 cups.
Salt - 1/2 tsp.
Olive oil - 1 tbsp.
Adequate water to mix the dough.
Butter - 1/2 cup.
All purpose flour - 1/2 cup.
METHOD:
Sieve flour, add salt, oil and water to make a stiff dough. Knead well. Divide in to even sized balls. Roll out to 20 cm circles. Smear butter, sprinkle little flour over and fold. Again smear butter, sprinkle little flour and fold. Roll out in to triangle shapes. Heat griddle, fry on both sides and serve with potato curry or any meat curry.

Cheese stick...
INGREDIENTS:
8 oz skim mozzarella cheese, cut in to 3 inch long sticks.
1 egg beaten.
1/2 cup, all purpose flour.
3/4 cup, dry bread crumbs.
Canola oil to fry the cheese sticks.
METHOD:
Slice the mozzarella cheese in to 3 inch long sticks. Dip the cheese into the beaten egg. Dredge in flour. Dip again in egg. Roll in bread crumbs, press firmly, so crumbs adhere. Chill at least 30 minutes. Fry in hot oil until golden brown. Drain. Serve hot with any favourite sauce.

Egg kofta curry...
INGREDIENTS:
Ground beef 1 1/2 lb.
Egg for binding - 1.
Cardamom powder - 1/8 tsp.
Cloves powder - 1/8 tsp.
Cinnamon powder - 1/8 tsp.
Salt - 1/2 tsp.
5 hard boiled eggs.
2 tbsp all purpose flour.
2 onions, sliced.
2 tomatoes, diced.
1/4 cup tomato puree or sauce.
3 inch size ginger piece , grated.
10 cloves of garlic, grated.
10 green chilies, sliced.
2 bay leaves.
3 to 4 tbsp oil.
1 tbsp garam masala.
METHOD:
Combine the first 6 ingredients and mix thoroughly.
Coat or dredge the hard boiled eggs in the all purpose flour.
Cover the eggs with the meat mixture. Place on a baking sheet and bake for 15 to 20 minutes or until done.
Heat oil and add sliced onion and saute. Add grated ginger, garlic and green chilies. Stir in the diced tomatoes, bay leaves, garam masala, and simmer. Add the tomato puree, salt, one cup of water and cook for a minute. Add the koftas one by one in the gravy. Add more water if necessary. Let it simmer for about 4 to 5 minutes. Serve hot with plain boiled rice.

Creamy mushroom soup...
INGREDIENTS:
3 tbsp Olive oil
1 onion sliced
8 oz mushroom sliced
3 cups beef stock
3 tbsp all purpose flour
1 cup milk
dash nutmeg
1/2 tsp parsley
1/2 tsp black pepper
1/8 tsp thyme
METHOD:
Heat oil, add the sliced onion and cook until soft. Add the mushrooms and cook for 3 minutes stirring constantly. Stir in the flour and cook for a minute. Gradually add the stock, bring to boil, simmer for 5 minutes, till thick. Add nutmeg, parsley, black pepper, thyme and simmer for 2 more minutes. Finally add the milk, bring to boil and remove from fire.
Blend half of the mixture in the blender until smooth. Add to the soup, mix well and serve.

INGREDIENTS:
Spinach - 1 1/2 lb, chopped.
Soy beans - 1/2 cup.
Onion - 1, chopped.
Grated coconut - 1/2 to 3/4 cup.
Cumin powder 1/2 tsp.
Garlic powder - 1/2 tsp.
Red chili powder 1/2 tsp.
Curry leaves - 1 sprig.
Mustard seeds - 1/2 tsp.
Olive oil - 2 tbsp.
Salt to taste.
METHOD:
Cook the soy beans with adequate water.
Heat oil, add mustard seeds, curry leaves, chopped onion and saute. When the onion turns clear add coconut, cumin powder, garlic powder, chili powder and saute. Add the chopped spinach and mix well. Sprinkle little water, cover, cook, stirring occasionally. When it half cooked add the cooked soy beans, salt and cook until spinach is ready and cooked.

Dash of baking soda.
METHOD:
Combine all the dry ingredients and keep aside. Beat together the eggs, honey and milk. Add the mashed banana and mix well. Sift the flour mixture into the banana mixture. Blend thoroughly. Stir in the melted butter. Set aside and allow to stand for at least half hour. Pour a ladle full of batter on to a hot lightly oiled fry pan or griddle. Cook until bubbles appear and begin to break. Turn over and cook on other side and serve with honey or any syrup.

1 egg.
4 tbsp sugar.
6 tbsp milk.
1/4 tsp salt.
1/3 cup chopped walnuts.
2-3 drops, vanilla extract.
1/2 cup dry bread crumbs.
Oil to fry the patties.
METHOD:
Put the bread slices in the work bowl of the food processor. Process until the crumbs are uniformly fine. Transfer to a large mixing bowl. Combine the egg, milk, salt, sugar, nuts and vanilla. Add to the bread crumbs and mix thoroughly. Divide into even sized balls. Flatten the balls into patties. Roll the patties in the dry bread crumbs to coat completely. Heat oil and fry the patties till crisp.

Pineapple upside-down cake...
INGREDIENTS:
Butter - 1/4 cup.
Light brown sugar - 3/4 cup.
Chopped walnuts - 1/2 cup.
Pineapple circle slices - 4 to 5.
Eggs - 3, separated.
Sugar - 1 cup.
All purpose flour - 1 cup.
Baking powder - 1 tsp.
Salt - 1/2 tsp.
Maraschino cherries - 4 to 5.
Pineapple juice - 1/4 cup.
METHOD:
Melt butter in a 9 inch cast iron skillet. Add brown sugar and chopped walnuts. Arrange pineapple slices in a single layer over brown sugar mixture. Place cherries in the centers of the pineapple rings. Set aside.
Beat egg yolks at medium speed until thick and lemon colored. Gradually add sugar, beating well. Combine the remaining dry ingredients and add to the yolk mixture. Stir in the juice.
Beat egg whites separately until stiff peaks form. Gently fold beaten egg whites in to the batter. Pour batter evenly over pineapple slices in skillet. Bake at 350 degrees for 40 to 50 minutes. Remove cake from oven. Cool cake in skillet for 30 minutes. Invert cake on to a serving plate.

Tofu with mixed veges...
INGREDIENTS:
Soft tofu - 7 oz, grated.
Mixed vegetables - 8 oz.
Salt - 1/2 tsp.
Red chili powder 1/4 tsp.
Grated ginger and garlic - 1 tbsp.
Cumin seeds 1/2 tsp.
Coriander powder - 1/4 tsp.
Black pepper powder - 1/8 tsp.
Nutmeg powder - 1/8 tsp.
Cinnamon powder - 1/8 tsp.
Turmeric powder - 1/2 tsp.
Fenugreek seeds - pinch.
Olive oil - 2-3 tbsp.
Cilantro leaves - 4 to 5 sprigs.
METHOD:
Cook the vegetables with little cumin seeds, chili powder, coriander powder, black pepper powder, nutmeg powder, cinnamon powder, turmeric powder and salt.
