INGREDIENTS:
1 LB pork meat with skin.
2 inch piece ginger, grated.
6-7 green chilies, sliced.
1/2 tsp meat masala.
1/4 cup diced onion.
1 cup diced tomatoes.
Salt to taste.
1 tbsp Olive oil.
2 sprigs curry leaves.
METHOD:
Clean and cut the meat into small pieces.
Heat oil, add the diced onion and saute. When it turns transparent add the diced tomatoes and saute. Add the meat masala, grated ginger and mix well. Add the meat, salt and adequate water to cook the meat. Cover and cook on medium heat, until the meat is cooked. Add the sliced green chilies, curry leaves and cook uncovered, stirring occasionally, till fairly dry.
