Tofu with mixed veges...

INGREDIENTS:

Soft tofu  -  7 oz, grated.
Mixed vegetables  -  8 oz.
Salt  -  1/2 tsp.
Red chili powder  1/4 tsp.
Grated ginger and garlic  -  1 tbsp.
Cumin seeds  1/2 tsp.
Coriander powder  -  1/4 tsp.
Black pepper powder -  1/8 tsp.
Nutmeg powder  -  1/8 tsp.
Cinnamon powder  -  1/8 tsp.
Turmeric powder  - 1/2 tsp.
Fenugreek seeds - pinch.
Olive oil  -  2-3 tbsp.
Cilantro leaves  -  4 to 5 sprigs.

METHOD:

Cook the vegetables with little cumin seeds, chili powder, coriander powder, black pepper powder, nutmeg powder, cinnamon powder, turmeric powder and salt. 
Meanwhile heat oil, add fenugreek seeds, cumin seeds, and diced onion.  When the seeds crackles add grated ginger, grated garlic and fry.  Add the grated tofu, salt and remaining spices.  Saute for few minutes.   Gradually add the cooked vegetables and mix well.  Cook for another two minutes.  Add the chopped leaves and serve.
