Waffles...

INGREDIENTS:

1 Cup unbleached all purpose flour.
1/2  tsp salt.
2 eggs, separated.
1 tsp baking powder.
1 cup room temperature milk.
2 tbsp melted butter or oil.

METHOD:

Turn on the waffle iron.
Sift together the flour, baking powder and salt in a mixing bowl.  Beat the egg yolks and milk together.  Pour the egg yolks and milk mixture on to the flour mix and blend thoroughly.  Stir in the oil or melted butter.  Set aside.  Beat the egg whites until stiff and fold into the batter.  Fill the hot lightly oiled waffle iron with a ladle full of batter.  Cook until the steam stops escaping from the sides, approximately 3 to 4 minutes.  Serve with maple syrup and butter.
