Creamy mushroom soup...


INGREDIENTS:

3 tbsp Olive oil
1 onion sliced
8 oz mushroom sliced
3 cups beef stock
3 tbsp all purpose flour
1 cup milk
dash nutmeg
1/2 tsp parsley
1/2 tsp black pepper
1/8 tsp thyme

METHOD:

Heat oil, add the sliced onion and cook until soft. Add the mushrooms and cook for 3 minutes stirring constantly. Stir in the flour and cook for a minute. Gradually add the stock, bring to boil, simmer for 5 minutes, till thick. Add nutmeg, parsley, black pepper, thyme and simmer for 2 more minutes. Finally add the milk, bring to boil and remove from fire.
Blend half of the mixture in the blender until smooth. Add to the soup, mix well and serve.
