INGREDIENTS:
Spinach - 1 1/2 lb, chopped.
Soy beans - 1/2 cup.
Onion - 1, chopped.
Grated coconut - 1/2 to 3/4 cup.
Cumin powder 1/2 tsp.
Garlic powder - 1/2 tsp.
Red chili powder 1/2 tsp.
Curry leaves - 1 sprig.
Mustard seeds - 1/2 tsp.
Olive oil - 2 tbsp.
Salt to taste.
METHOD:
Cook the soy beans with adequate water.
Heat oil, add mustard seeds, curry leaves, chopped onion and saute. When the onion turns clear add coconut, cumin powder, garlic powder, chili powder and saute. Add the chopped spinach and mix well. Sprinkle little water, cover, cook, stirring occasionally. When it half cooked add the cooked soy beans, salt and cook until spinach is ready and cooked.
