INGREDIENTS:
2 cups wheat flour.
2 tbsp butter.
1/2 tsp salt.
Combine all the ingredients, and make a soft dough.
2 potatoes, skinned and diced.
1 carrot, diced.
3/4 cup peas.
4 green chillies, seeded and chopped fine.
2 cloves garlic, chopped.
1 inch ginger, chopped.
1 tbsp dried cranberries.
1 tsp cumin seeds.
1/8 tsp garam masala powder.
1 bunch, coriander leaves, chopped.
oil to fry the samosas.
METHOD:
Heat 2 tbsp oil, add ginger, garlic, chilies and fry. Gradually stir in the garam masala and cumin seeds. Add the diced vegetables and little water to cook the vegetables dry. Stir in the cranberries and chopped coriander leaves. Stir in salt and remove from heat.
Divide the dough in to even sized balls. Roll out in to 6 inch rounds. Cut down the center. Make a cone with each piece. Put in the prepared filling and seal the edges with water. Deep fry in hot oil, till light brown. Serve hot.
